Red D are recruiting a Food & Beverage Operations Manager to join a luxury five-star resort located in Co. Kildare, just 30 minutes from Dublin.

This is an exceptional opportunity for an experienced Food & Beverage Operations Manager to lead high-end hotel dining operations and conference & banqueting services at one of Ireland’s most exclusive hospitality destinations.

Reporting directly to the Director of Food & Beverage, this role oversees multiple outlets including private dining, drawing room service, room service, and large-scale events across the resort. Cocktail bars are managed separately. You’ll work with an experienced team of Heads of Department to deliver service excellence, manage costs, and enhance the overall guest experience.

Key Responsibilities:

Oversee all hotel Food & Beverage operations and Conference & Banqueting functions (excluding cocktail bars).

Lead and support a team of Heads of Department, ensuring smooth daily operations and high service standards.

Coordinate and execute private dining, room service, drawing room service, and events across the resort.

Liaise with Sales, Events, and group organisers to deliver seamless, high-end guest experiences.

Manage departmental budgets, control costs, and monitor payroll vs revenue performance.

Identify training needs, implement onboarding and ongoing development programmes.

Oversee stock, maintenance, equipment procurement and reporting in collaboration with the Cost Controller.

Maintain HR systems including ALKIMII, ensuring compliance and timely reporting.

Respond to guest feedback and follow up to ensure satisfaction and continuous improvement.

About You:

Proven experience as a Food & Beverage Operations Manager or in a senior F&B leadership role.

Strong people management, delegation, and training skills.

Operational knowledge of both hotel dining and banqueting services in a luxury setting.

Confident communicator with strong organisational and time management abilities.

Commercially focused, guest-centric, and passionate about five-star hospitality.
