Red D are recruiting a Senior Food & Beverage Manager for a busy, well-established property in the Midlands, less than an hour from Dublin.

This is an excellent opportunity for a talented and experienced Senior Food & Beverage Manager to join a forward-thinking team and take full operational responsibility for the Bar, Restaurant, Banquet Room and Coffee Dock. The role reports directly to the General Manager and Managing Director.

We’re looking for a people-focused leader who can balance service standards with strong commercial performance. The successful candidate will play a key part in shaping the food and beverage offering, driving profitability and ensuring consistently high guest satisfaction.

Key Responsibilities

Profitability & Financial Performance

Schedule staff in line with business levels

Manage departmental payroll costs

Drive upselling and revenue-generating opportunities

Forecast weekly sales, labour and overheads; investigate and address variances

Guest Experience & Service Standards

Respond to guest feedback with action plans for improvement

Ensure consistent food and beverage quality and presentation

Collaborate with the Head Chef on menu and recipe standards

Oversee music, lighting and ambience in line with guest expectations

Product & Inventory Management

Source beverage and coffee products through approved suppliers

Work with stocktakers and manage monthly beverage inventories

Monitor and record waste, returns and supplier credits

Ensure safe and correct storage of all beverage stock

Daily Operations & Administration

Lead the daily operation of all F&B outlets

Ensure accurate cash handling and till management

Attend and contribute to management meetings

Coordinate with Sales & Marketing on promotions and events

Team Leadership & Development

Recruit, train and mentor a high-performing team

Deliver shift briefings and daily coaching

Develop and implement SOPs where needed

Identify training needs across wine, cocktails and menu knowledge

Health & Safety, Compliance & Policy Adherence

Ensure compliance with HACCP, health & safety and licensing requirements

Follow all opening, closing and security procedures

Maintain full knowledge of company policies and act as a role model

You’ll be an experienced and organised Senior Food & Beverage Manager with strong operational skills, commercial awareness and a passion for service. You’ll bring a calm, hands-on leadership style and a focus on standards, training and team morale. This role will suit someone living in Dublin, the Midlands or Meath.
