Red D are recruiting a Head Chef for a well-established, quality four star hotel in West Cork.
This Head Chef role is a senior leadership position within the hotel, responsible for the full kitchen operation across restaurant, bar food, breakfast, and a strong events and banqueting business. The Head Chef will take ownership of food standards, team performance, and overall kitchen delivery in a busy, structured environment.
This Head Chef position requires a proven background in a quality four star hotel. It will not suit candidates without solid hotel experience. The pace, scale, and expectations demand someone who understands how a professional hotel kitchen operates.
The Role
As Head Chef, you will:
- Lead all kitchen operations across restaurant, bar, breakfast, and banqueting
- Deliver consistent, high-quality food aligned with a strong four star hotel offering
- Manage and develop a structured kitchen team, setting clear standards
- Take full ownership of food cost, GP, and stock control
- Plan and evolve menus with a focus on quality and seasonality
- Ensure HACCP and food safety standards are maintained at all times
- Work closely with senior management to align kitchen and front of house operations
- Manage labour, rostering, and kitchen efficiency
- Build a stable, well-trained team and maintain strong retention
The Person
For this Head Chef role, you must have:
- Proven experience as a Head Chef or Senior Sous Chef within a quality four star hotel
- Strong experience managing volume service including events and banqueting
- A clear track record of delivering consistent food standards
- Strong financial understanding across food cost and labour control
- A hands-on leadership style with the ability to manage and develop a team
- A structured, organised approach to running a kitchen
Candidates without quality hotel experience will not be considered.
