Red D are recruiting a Restaurant Manager for a luxury hotel property in the West of Ireland, known for its food offering, warm hospitality and excellent customer experience.

This Restaurant Manager role is a key leadership position within the hotel’s food and beverage operation. You’ll lead the restaurant team day to day, maintain high service standards and work closely with senior management and the kitchen team to ensure a smooth, professional and welcoming experience for every guest.

We’re looking for a Restaurant Manager with energy, personality and excellent operational ability. Someone who is hands-on, visible on the floor and comfortable leading a busy restaurant operation within a quality hotel environment.

Principal Responsibilities

Restaurant Operations & Service Excellence

  • Oversee the daily operation of the hotel restaurant to ensure consistently high service standards
  • Lead service on the floor and maintain a visible presence during busy periods
  • Ensure the restaurant is presented to a high standard at all times including cleanliness, atmosphere and mise en place
  • Develop and maintain restaurant service procedures and operational standards
  • Handle guest feedback professionally and resolve issues efficiently
  • Work closely with the kitchen and wider hotel management team to ensure smooth service and communication

Team Leadership & Development

  • Recruit, train and develop the restaurant team
  • Lead by example and create a positive, professional working environment
  • Organise regular training focused on service standards, food and beverage knowledge and guest experience
  • Support, motivate and develop team members to maintain high performance
  • Manage rotas and staffing levels in line with business needs and budgets

Financial & Commercial Management

  • Support the delivery of restaurant revenue and profitability targets
  • Monitor labour costs and scheduling in line with budgets
  • Drive upselling opportunities and maximise guest spend
  • Assist with stock control, ordering and cost management
  • Review sales performance and identify opportunities to improve results

Required Experience & Skills

  • Previous experience as a Restaurant Manager within a busy hotel or high-quality restaurant operation
  • Excellent leadership and people management skills
  • Excellent customer service and communication skills
  • Financial awareness with experience managing labour and operational costs
  • Comfortable working in a fast-paced hospitality environment
  • Experience using POS systems and restaurant management systems
  • Food Safety training and good understanding of compliance standards
