Red D are recruiting a talented Head Pastry Chef for a 5* Luxury resort hotel in Dublin


Reporting to the Executive Head Chef, your main areas of responsibility will include but are not confined to:


  • Managing the production of food to an exceptional standard
  • The creation of imaginative menu items for the dessert, pastry, bread section.
  • Managing measures in place for achieving gross margins on food sales and controlling relevant staff costs
  • Implementing, monitoring and complying with food hygiene and HACCP procedures
  • Implementing, monitoring and complying with Health & Safety Procedures
  • Ensuring quality control procedures are implemented and adhered to
  • Stock rotation, ordering & recording as required
  • Training & supervising junior pastry chef as required
  • Maintaining regular consistent and professional attendance, punctuality, personal appearance and personal hygiene.
