About the Role:

Red D are recruiting a Director of Food & Beverage for a five-star luxury hotel in Dublin, This is an exceptional opportunity to lead a world-class team and elevate the dining experience to new heights.

Key Responsibilities:

  • Leadership & Management: Lead, motivate, and manage the food and beverage team to ensure the highest standards of service and culinary excellence.
  • Operational Oversight: Oversee the daily operations of all food and beverage outlets, including restaurants, bars, room service, and banqueting, ensuring consistent quality and service. Ensure all areas of responsibility are clean and well-maintained.
  • Quality Assurance: Maintain the highest levels of hygiene, safety, and compliance with health regulations. Ensure all food and beverage offerings meet the luxury standards expected by our guests. Perform regular departmental audits to achieve Leading Quality Assurance (LQA) targets.
  • Guest Experience: Enhance the guest experience by developing and implementing innovative food and beverage concepts. Act on guest feedback promptly to continuously improve service.
  • Staff Training & Development: Develop and implement training programs to enhance the skills and performance of the food and beverage team. Foster a positive and inclusive work environment, ensuring the hotel’s vision and mission are communicated and upheld.
  • Budget & Cost Management: Develop and manage budgets for the food and beverage department, ensuring cost control and maximizing profitability. Monitor purchasing and costs to align with financial goals. Ensure all departmental costs and sales are in line with the hotel budget.
  • Vendor Relations: Build and maintain strong relationships with suppliers and vendors to secure the best quality products and services.
  • Menu Development: Collaborate with culinary teams to design and update menus, ensuring a diverse and high-quality selection that meets guest expectations and market trends.
  • Event Management: Oversee the planning and execution of events, banquets, and private functions, ensuring exceptional service and guest satisfaction.
  • Financial Reporting: Prepare and present financial reports to senior management, including revenue forecasts, budget variance analyses, and profitability assessments.
  • Team Development: Assist in the recruitment and selection of F&B managers, conduct appraisals, and develop key team members with succession planning.
  • Compliance & Safety: Assist with regular HACCP, fire, health, and safety audits. Ensure compliance with cash handling, credit policies, and all control measures.

Requirements:

  • Experience: Proven experience in a senior food and beverage role within a luxury hotel environment. Previous experience as a Director of Food & Beverage is essential.
  • Leadership Skills: Strong leadership and team management skills with the ability to inspire and motivate staff.
  • Culinary Knowledge: Extensive knowledge of food and beverage operations, culinary trends, and luxury service standards.
  • Customer Service: Exceptional customer service skills and a passion for enhancing the guest experience.
  • Communication: Excellent communication and interpersonal skills.
  • Problem-Solving: Strong problem-solving skills and the ability to remain calm under pressure.
  • Flexibility: Ability to work flexible hours, including weekends and holidays, as required.
  • Financial Acumen: Strong financial management skills with experience in budgeting, forecasting, and cost control.
  • Professionalism: High levels of energy, enthusiasm, and professionalism, with the ability to set a positive example for the team.
  • LQA Knowledge: Full knowledge and compliance with the Leading Hotels of the World (LHW) and LQA program.
