Red D are recruiting a Brasserie Manager for an award-winning luxury hotel in Co. Kerry.

This is a fantastic opportunity for an experienced Brasserie Manager to lead a talented front-of-house team in one of Ireland’s most beautiful settings. As Brasserie Manager, you’ll play a key role in shaping the guest experience, developing your team, and driving the success of the hotel’s brasserie operation.

In this hands-on role, the Brasserie Manager will create a welcoming atmosphere that keeps guests returning and inspires team loyalty. You’ll champion service excellence, implement high standards, and help grow the business through innovative ideas and strong operational management.

Key Responsibilities:

• Lead the daily operations of the brasserie, ensuring a warm, professional, and high-quality guest experience.
• Recruit, train, and develop a motivated front-of-house team focused on delivering excellent service.
• Implement and oversee SOPs, guidelines, and service standards in line with the hotel’s vision.
• Manage stock control for the brasserie, including ordering, stocktakes, and supplier relations.
• Ensure all products meet quality standards and deliveries follow hotel policies.
• Prepare reports, schedules, and paperwork in an organised and timely manner.
• Manage cash handling and reconciliation according to company policies.
• Oversee staff communication, scheduling, and ongoing team training.
• Build strong guest relationships and contribute to the continued growth and success of the brasserie.

What We’re Looking For:

• 2+ years’ experience as a Brasserie Manager or in a similar leadership role within a busy food and beverage environment.
• Proven leadership skills and experience managing a food and beverage team.
• Strong organisational and communication skills with excellent attention to detail.
• Proficient in Microsoft Office, including Excel.
• Fluent spoken and written English.
