Red D are recruiting an accomplished Executive Head Chef to lead the kitchen at a luxury hotel in Dublin. About the Role
As Executive Head Chef, you’ll oversee the full culinary operation — from restaurant dining and stylish bars to events. You’ll shape menus, drive standards and ensure every dish reflects quality, consistency and flair. Just as importantly, you’ll mentor and motivate your team, developing their skills and fostering a supportive kitchen culture.
Key Responsibilities
- Lead, mentor and inspire a close-knit kitchen brigade, creating a culture of training and growth
- Manage food production, purchasing, stock control and GP targets across all outlets
- Develop seasonal menus that showcase local Irish produce and keep the offering fresh and exciting
- Ensure impeccable HACCP, hygiene and food safety standards at all times
- Build strong communication with hotel management and other departments
- Stay ahead of industry trends, bringing new ideas and innovation to the food experience
The Ideal Candidate
- Proven experience as an Executive Head Chef or Executive Sous Chef in a leading 4 or 5-star hotel
- Strong leadership ability with a genuine passion for training, mentoring and team development
- Excellent knowledge of Irish produce and current food trends
- Commercially aware with solid experience managing budgets and costs
- Calm, organised and professional under pressure
- In-depth understanding of HACCP and compliance requirements
