Red D are recruiting a Deputy General Manager – Food & Beverage for one of Northern Ireland’s leading five-star luxury hotels.

This is a senior leadership role within a landmark property recognised for its exceptional standards, refined service and highly regarded dining experiences. The Deputy General Manager – Food & Beverage will play a central role in the leadership of the hotel, with particular responsibility for a substantial food and beverage operation spanning multiple restaurants, bars, lounges, private dining and large-scale events.

Working alongside the General Manager and executive leadership team, the Deputy General Manager – Food & Beverage will help shape the direction, culture and performance of the hotel while ensuring that every element of the food and beverage offering reflects the standards expected of a leading luxury property.

This role requires presence, judgement and experience. It will suit an established Food & Beverage Director or senior Food & Beverage leader ready to step into a broader operational leadership role at one of the most respected hotels in Ireland.

The Role

As Deputy General Manager – Food & Beverage, you will hold overall responsibility for the leadership, performance and continued development of the hotel’s food and beverage division while contributing to the wider strategic and operational direction of the property.

The Deputy General Manager – Food & Beverage will act as a key support to the General Manager and a senior voice within the executive team, ensuring that operational decisions always reflect the standards, reputation and commercial objectives of the hotel.

Key Responsibilities

Operational Leadership
• Lead the full food and beverage operation including restaurants, bars, lounges, in-room dining, private dining and events
• Ensure five-star standards are delivered consistently across every service and guest interaction
• Work closely with the Executive Chef and senior kitchen leaders to maintain excellence in product, presentation and service
• Maintain a visible leadership presence across the hotel, supporting operational teams and protecting standards

Team Leadership
• Lead, mentor and develop a large multi-layered management and service team
• Build a culture of professionalism, accountability and pride across all outlets
• Support succession planning and talent development within the food and beverage division

Commercial Performance
• Oversee financial planning, budgeting, cost control and revenue performance across the food and beverage operation
• Drive profitability while maintaining the quality and experience expected of a leading luxury hotel
• Work closely with Sales, Events and Marketing to maximise opportunities across private dining, events and destination dining

Executive Collaboration
• Work as a key member of the hotel’s executive leadership team
• Partner with Rooms, Sales, Marketing and Finance to ensure a seamless guest journey across the entire property
• Contribute to the strategic direction, operational planning and long-term success of the hotel

Standards and Compliance
• Maintain the highest standards in health, safety, hygiene and operational compliance
• Ensure service delivery consistently reflects the reputation and positioning of a leading five-star hotel

What We’re Looking For

• Significant experience as a Director of Food & Beverage or senior multi-outlet Food & Beverage leader within a luxury or five-star hotel
• The presence and maturity required to lead large teams and operate confidently within a senior leadership team
• A strong commercial understanding with a proven ability to deliver financial performance while protecting quality
• A visible, floor-led leadership style with a natural ability to engage both guests and teams
• A deep understanding of luxury hospitality and the expectations of international guests
• The ambition and capability to operate at Deputy General Manager level within a leading Irish hotel
