Red D are recruiting a Director of Food & Beverage for one of Ireland’s leading five-star luxury hotels.
This is a senior leadership role within a large, complex, and high-volume operation. The food and beverage offering is extensive, covering multiple restaurants, bars, lounges, event spaces, and private dining, all operating at a consistently high standard.
The business is established and performing well, but like any serious operation, there is constant pressure to refine, improve, and stay ahead. This role requires a leader who is comfortable operating at scale, making decisions, and driving performance across every part of the F&B operation.
This is not a stepping-stone role. It’s a position for someone who has already proven themselves and is ready to take full ownership of a significant food and beverage business.
What you’ll be doing
- Leading the full food and beverage operation across multiple outlets and revenue streams
- Driving consistency across all areas, from fine dining to large-scale events and daily service
- Managing, developing, and challenging a large team, building a strong leadership structure across the department
- Owning the financial performance of the F&B division, including budgeting, forecasting, and cost control
- Working closely with the Executive Chef and senior leadership team to ensure alignment across the business
- Identifying where standards can improve and implementing change where needed
- Balancing guest expectations with commercial performance on a daily basis
- Ensuring compliance across all areas, including health, safety, and hygiene
What we’re looking for
- A current Director of Food & Beverage or a senior F&B leader from a large, busy four-star or five-star hotel or resort
- Proven experience managing multiple outlets and significant volume in a structured environment
- Strong commercial awareness with a clear understanding of cost control, labour, and profitability
- A leader who is visible, decisive, and comfortable holding people accountable
- Experience building and developing strong management teams
- The ability to operate at pace without losing control of detail
- A clear understanding of what high standards look like in practice
