This is a senior leadership role with real scale and genuine headroom for the right person to make their mark. You’ll lead a large, multi-outlet food and beverage operation where pace is fast, volumes are high and expectations don’t ease off.
This isn’t a hotel role and it’s not a small group of outlets. It’s a complex, high-footfall environment where everything needs to work, all day, every day.
This role is about taking what’s there and making it sharper, more consistent and more commercially effective.
Ideas matter here. But they only count if they work in the middle of a busy service.
What you’ll be doing
- Leading a high-volume, multi-outlet restaurants and bars operation with full accountability
- Driving menu development, service style and overall customer experience
- Making sure new ideas translate into something that actually works on the ground
- Keeping standards consistent across all outlets, all day
- Owning performance across P&L, labour, cost control and commercial delivery
- Identifying ways to increase spend, improve flow and maximise trading opportunities
- Working closely with senior stakeholders to align food and beverage with the wider experience
- Supporting large-scale events, seasonal peaks and high-footfall trading periods

Leadership

- Leading, developing and managing a large, diverse hospitality team

- Creating structure and consistency across multiple outlets
- Encouraging ideas, but knowing what will actually land in a live environment
- Managing performance, engagement and development without overcomplicating it
Standards & delivery
- Maintaining strong food safety, health and safety and operational standards
- Running a complex operation at peak volume without losing control
- Keeping a grip on detail while still driving the bigger picture
The person
- Clear upward trajectory in your career to date
- Senior experience in high-volume hospitality
- A track record managing large, multi-outlet restaurant and bar operations
- Confidence leading big teams in fast-paced environments
- Strong commercial awareness across budgets, labour and KPIs
- The ability to bring ideas and deliver them in a live, high-pressure setting
- Strong stakeholder management and presence at senior level
- A clear focus on standards, detail and delivery
- A hospitality qualification is helpful. Experience at this level matters more.
