Red D are recruiting a Director of Food & Beverage for a leading five-star hotel in Dublin.

This is an important senior appointment, taking responsibility for a substantial Food & Beverage operation across restaurants, bars, meetings, events and banqueting.

We are looking for an experienced F&B leader who brings strong operational judgement, excellent financial management and a real understanding of food, wine and five-star hospitality.

The Director of Food & Beverage will work closely with the Executive Head Chef and senior management team, leading an established F&B team and taking ownership of both the day-to-day operation and its financial performance.

It’s a role for someone who can see the whole picture. The guest experience, the team, the quality of the food and beverage offering and the numbers behind the business all matter.

The Role

As Director of Food & Beverage, you’ll lead the complete F&B operation and have the scope to influence how it continues to develop.

Your responsibilities will include:

• Leading the Food & Beverage operation across restaurants, bars, meetings, events, banqueting and private functions
• Taking ownership of the departmental P&L, budgets, forecasting and financial performance
• Driving revenue and profitability across each area of the F&B business
• Managing payroll and labour costs effectively in line with business levels and service requirements
• Maintaining strong control of food and beverage costs, purchasing, stock, margins and departmental expenditure
• Analysing financial and operational performance and identifying opportunities to improve revenue, margins and efficiency
• Working closely with the Executive Head Chef on menus, concepts, pricing, food costs and the commercial performance of the overall offering
• Keeping the F&B offering relevant and competitive, with a strong awareness of Dublin’s restaurant, bar, food and wine market
• Leading, developing and supporting the F&B management team
• Building a strong service culture and maintaining consistently high five-star standards
• Working closely with Sales and Events to maximise meetings, conferences, weddings, corporate business and private events
• Contributing to annual business planning and the continued development of the hotel’s F&B offering
• Maintaining excellent communication between the kitchen, F&B teams and other departments
• Playing an active and visible role within the hotel’s senior management team

What We Are Looking For

We are looking for someone who understands F&B as a business as well as a hospitality operation.

You’ll need to be comfortable with the numbers and able to make sound commercial decisions, while remaining close to the operation, the team and the guest experience.

You may currently be a Director of Food & Beverage, Director of Operations or Deputy General Manager. We would also be interested in an exceptional Food & Beverage Manager who has already gained significant responsibility for a large operation and is ready to move into a Director role.

We are looking for:

• Strong Food & Beverage management experience within a leading hotel or comparable high-end hospitality business
• Excellent financial knowledge with hands-on experience of P&L, budgeting, forecasting and commercial planning
• A clear understanding of revenue, profitability, labour management, food and beverage costs and margin
• Strong restaurant, bar, banqueting, meetings and events experience
• A genuine interest in food, wine and the wider hospitality market
• The ability to balance commercial performance with excellent service and guest experience
• Strong leadership skills and a track record of developing managers and teams
• The confidence to introduce ideas, question existing practices and make well-judged decisions
• The ability to build an excellent working relationship with the Executive Head Chef and wider senior management team
• A visible, approachable leadership style and high personal standards

The successful Director of Food & Beverage will have the opportunity to build on those foundations, further develop the F&B business and have a meaningful impact on its financial performance, service standards and future direction.
