Salary: €100,000–€120,000 + Up to 20% Bonus + Private Healthcare
Red D are recruiting an exceptional Complex General Manager to lead one of Dublin’s most interesting new hospitality developments.
This is a significant senior leadership appointment, offering the opportunity to take a major new hospitality destination from pre-opening through to a fully operational business, bringing together a collection of individual bars, restaurants and a new four-star hotel.
The development will open in phases, with a number of distinctive food and beverage venues launching ahead of the hotel. Each business will have its own identity, atmosphere and customer base, creating a varied and commercially demanding operation.
As Complex General Manager, you will take overall responsibility for the entire development, initially leading the opening and establishment of the bars and restaurant before overseeing the launch and ongoing performance of the hotel.
We are looking for an accomplished hospitality leader with strong commercial instincts, considerable operational experience and the personality to build something special.
This is an opportunity for someone who enjoys being involved from the beginning, building teams, shaping a business and creating a destination that customers want to return to.
The Role
The Complex General Manager will have full operational and commercial responsibility for the development, reporting to and working closely with the ownership and senior leadership team.
You will lead the business through its pre-opening and launch phases, establish the management structure and ensure each individual venue is positioned for long-term success.
Once fully operational, you will oversee a substantial hospitality business comprising several bar and restaurant concepts alongside a four-star hotel.
This is a hands-on senior leadership position requiring someone who is equally comfortable discussing commercial strategy, managing budgets, developing senior managers and being present on the floor during a busy trading period.

- Establish the management structure, operating procedures, service standards and culture across the business.
- Recruit, develop and lead an experienced senior management team.
- Oversee operational readiness across the individual bars, restaurant and subsequent hotel opening.
- Work closely with ownership and the wider business throughout the development and opening phases.
- Ensure each venue is appropriately staffed, equipped and commercially prepared for launch.
- Establish effective communication and working relationships across the entire complex.
- Build a strong foundation for the long-term success of the business.
Commercial & Financial Management
- Take overall responsibility for the financial performance and profitability of the complex.
- Develop and manage annual budgets, forecasts and business plans.
- Maintain strong control of payroll, margins, stock, operating costs and key performance indicators.
- Identify opportunities to grow revenue, improve profitability and maximise the commercial potential of each venue.
- Understand trading patterns and customer behaviour to drive footfall, spend and repeat business.
- Ensure each individual business achieves its commercial objectives while contributing to the overall performance of the complex.
- Work closely with the senior management team to review performance and implement improvements.
Bars, Restaurants & Hospitality Operations
The initial phase of the development will include a collection of individual hospitality concepts, including a cocktail bar, traditional pub, restaurant and outdoor hospitality space.
The Complex General Manager will:
- Oversee the successful opening and ongoing operation of each venue.
- Ensure each business develops its own identity, atmosphere and customer offering.
- Recruit and support strong operational managers with clear responsibility for their individual venues.
- Establish consistently high standards across food, beverage, service and customer experience.
- Drive revenue, footfall and profitability across the different concepts.
- Ensure staffing, service delivery and operational structures reflect the different trading patterns and demands of each business.
- Maintain strong financial and operational controls across all venues.
- Develop a collaborative management culture while allowing each business to retain its individual character.
- Establish the development as a recognised destination within Dublin’s hospitality market.
Hotel Operations
As the development progresses, the Complex General Manager will take overall responsibility for the opening and performance of the new four-star hotel.
Responsibilities will include:
- Leading the operational preparation and successful opening of the hotel.
- Establishing a strong hotel management structure and ensuring effective integration with the wider complex.
- Overseeing the performance of Rooms Division, Front Office, Accommodation and associated hotel operations.
- Maintaining excellent guest service and operational standards.
- Driving hotel revenue, profitability and commercial performance.
- Maximising opportunities between the hotel, bars, restaurant and other hospitality offerings.
- Ensuring the hotel establishes a strong reputation and clear market position.

The Complex General Manager will be responsible for creating a positive, accountable and commercially focused management culture across the entire operation.
- Recruit, lead, motivate and retain an excellent senior management team.
- Establish clear responsibilities, expectations and performance standards.
- Develop managers and support career progression and succession planning.
- Maintain a visible and approachable leadership presence throughout the business.
- Build strong working relationships across the different venues and departments.
- Take responsibility for employee relations, performance management and the consistent application of HR policies and procedures.
- Create an environment where employees feel supported, valued and motivated to deliver excellent hospitality.
Customer Experience & Operational Standards
- Establish consistently high standards of hospitality across the development.
- Ensure each venue delivers an experience appropriate to its individual concept and customer base.
- Maintain a strong presence within the operation, particularly during key trading periods.
- Respond effectively to customer feedback and operational challenges.
- Ensure full compliance with health and safety, food safety, licensing and other regulatory requirements.
- Protect the reputation, assets and commercial interests of the business.
