Red D are recruiting an Operations Manager for a large, high-volume four-star hotel in Dublin. This is a senior leadership role reporting to the Deputy General Manager, with full responsibility for day-to-day hotel operations and a significant focus on Food & Beverage performance.

This role will suit an Operations Manager or Deputy General Manager who has come up through Food & Beverage and understands what it takes to run busy bars, restaurants and meetings and events while still maintaining control across the wider hotel.

The Role

As Operations Manager, you will take ownership of daily operations across the hotel, with particular responsibility for driving standards, profitability and consistency across Food & Beverage. You will work closely with the Deputy General Manager, Heads of Department and senior F&B leadership to deliver strong commercial and guest experience results.

This is a hands-on, floor-based role in a fast-paced environment, where visibility, decisiveness and operational credibility are essential.

Key Responsibilities

  • Lead the day-to-day operations of the hotel with a strong emphasis on Food & Beverage performance
  • Act as the senior operational lead across bars, restaurants, meetings and events and service delivery
  • Support the Deputy General Manager in the overall management of the hotel
  • Work closely with Food & Beverage Managers and Head Chef to drive sales, standards and efficiency
  • Manage payroll, GP and cost controls across F&B and wider operations
  • Lead, coach and hold Heads of Department accountable for performance
  • Ensure SOPs, service standards and audit requirements are consistently met
  • Take ownership of guest complaints, particularly relating to Food & Beverage
  • Oversee Duty Management and ensure strong leadership presence across all trading periods
  • Support stock control, inventory management and cost optimisation
  • Maintain high standards of hygiene, health and safety and equipment care
  • Support HR with training, engagement, performance management and disciplinary processes
  • Carry out Duty Management shifts as required

About You

  • Proven experience as an Operations Manager, Deputy General Manager or Senior F&B Manager in a hotel environment
  • Strong Food & Beverage background is essential, ideally within a busy four-star or large-scale property
  • Commercially focused with hands-on experience managing payroll, GP and departmental budgets
  • Comfortable leading large teams and maintaining standards in high-volume service environments
  • Confident, calm and credible on the floor during peak trading periods
  • A natural communicator who works well across departments and challenges constructively
