Red D are recruiting a Head Chef for a beautifully restored gastropub in Co. Clare.

This Head Chef role offers the opportunity to lead the kitchen and define a produce-led food offering built around exceptional Irish ingredients. The focus is on quality, consistency and building a strong reputation rather than high-volume turnover.

The Head Chef will work closely with ownership and have genuine input into menu direction, supplier relationships and kitchen culture. Short-term accommodation is available to support relocation.

This is a serious Head Chef position suited to someone who values precision, discipline and pride in the finished plate.

The Role

As Head Chef, you will:

• Lead all kitchen operations and daily service
• Design and deliver seasonal, produce-driven menus
• Build relationships with local suppliers and producers
• Maintain exceptional food quality, presentation and consistency
• Recruit, train and lead the kitchen team
• Manage labour, GP, ordering and stock control
• Ensure full compliance with food safety and hygiene standards
• Create a calm, professional and structured kitchen environment

Service will be focused and controlled, allowing proper preparation and attention to detail.

The Ideal Head Chef

The successful Head Chef will bring:

• Experience as a Head Chef or a strong Senior Sous Chef ready to step up
• Background in quality gastropub, restaurant or hotel kitchens
• Strong understanding of seasonal Irish produce
• Clear leadership and team development ability
• Commercial awareness and cost control experience
• A calm, organised and consistent approach
