Red D are recruiting a Junior Sous Chef for a small luxury coastal hotel in Dun Laoghaire, home to a highly regarded restaurant known for precise cooking, strong produce and serious attention to detail.
This is an intimate, focused kitchen where standards are high, the team is tight, and the Junior Sous Chef plays a visible, hands-on leadership role every day.
This Junior Sous Chef job offers the chance to step into real responsibility, working closely with an experienced Head Chef while developing the skills and confidence required to progress to Sous Chef level. It will suit a strong Senior Chef de Partie who wants to step up in a structured, professional kitchen.
The Role
Kitchen Leadership & Service
- Support the Head Chef and Sous Chef in the daily running of the kitchen
- Lead service across sections including larder, pasta, mains and pass
- Take charge of the kitchen in the absence of senior chefs
- Ensure prep is organised, service runs smoothly and standards are maintained at all times
- Maintain rigorous food hygiene and operational discipline
Team Development & Communication
- Act as the link between senior chefs and Chef de Partie and Commis chefs
- Support the training and induction of new team members
- Help create a professional, respectful kitchen culture
- Lead by example through preparation, organisation and service
Food Quality & Menu Execution
- Work alongside senior chefs to deliver a consistent, produce-driven menu
- Contribute ideas and techniques while maintaining the restaurant’s identity
- Protect the integrity, presentation and quality of every dish

What’s on Offer
- Salary €40,000 to €45,000 depending on experience, plus tips
- 40–44 hour working week
