Head of Visitor Catering

Red D are recruiting a Head of Visitor Catering for one of Ireland’s most talked-about and high-profile visitor destinations.

This is a senior leadership role with real scale. The Head of Visitor Catering will lead a large, multi-outlet operation where pace is fast, standards are high and expectations are constant.

This is not about maintaining the status quo. The focus is on shaping a catering experience that feels current, relevant and worth talking about. Innovation and storytelling are central to the role, but they need to translate into something guests actually experience, not concepts that sit on paper.

You’ll have the scope to influence how food and beverage fits into a broader visitor journey, creating moments that drive engagement, repeat visits and commercial performance.

What You’ll Be Doing

  • Leading a high-volume catering operation across multiple outlets with full accountability
  • Driving innovation across menus, service style and overall guest experience
  • Bringing storytelling into the operation in a way that feels natural and well-executed
  • Ensuring consistency and high standards across all food, beverage and service delivery
  • Taking ownership of performance including P&L, labour and cost control
  • Identifying opportunities to increase spend, flow and overall visitor engagement
  • Working closely with senior stakeholders to shape and align the wider visitor experience
  • Supporting large-scale events and seasonal activations

Leadership

This role requires a strong, visible leader.

  • Leading, developing and supporting a large and diverse hospitality team
  • Creating a culture where standards are clear and accountability is expected
  • Encouraging new ideas while ensuring they work operationally
  • Building structure, clarity and consistency across the team
  • Managing performance, engagement and development

Standards & Delivery

  • Maintaining strong food safety, health and safety and operational standards
  • Ensuring the operation runs smoothly at peak volume
  • Managing a fast-moving, complex environment with control and attention to detail

The Person

The successful Head of Visitor Catering will bring:

  • Senior leadership experience in high-volume hospitality
  • A strong track record managing large-scale, multi-outlet operations
  • The ability to lead large teams in fast-paced environments
  • Solid commercial understanding with experience managing budgets, labour and KPIs
  • Experience introducing innovation that works in a live operation
  • The ability to translate storytelling into real, on-the-ground guest experiences
  • Strong stakeholder management skills and confidence at senior level
  • A clear focus on standards, detail and delivery

A hospitality qualification is helpful, but experience at this level matters more.
