Red D are recruiting a Junior Sous Chef for a luxury hotel in County Armagh, offering a strong opportunity for a talented chef to take real ownership of a busy bistro and bar outlet within a well-regarded resort setting.
This Junior Sous Chef role is ideal for someone ready to step up, lead a section with confidence and play a key part in delivering consistent, high-quality food in a fast-paced, all-day dining environment. The Junior Sous Chef will work closely with the senior kitchen team to drive standards, support the brigade and ensure smooth day-to-day operations across the bistro and bar.
The Junior Sous Chef will take responsibility for the bistro and bar food offering, managing service, supporting menu development and maintaining strong control over quality, consistency and cost.
What you’ll be doing:
• Leading the kitchen team across the bistro and bar outlet, ensuring service runs smoothly and efficiently
• Supporting the Head Chef and Sous Chef with daily kitchen operations
• Maintaining high standards of food quality, presentation and consistency
• Assisting with menu planning and development, with a focus on seasonal, locally sourced produce
• Managing stock control, ordering and minimising waste
• Ensuring full compliance with HACCP and food safety standards
• Training and developing junior chefs, building a strong and reliable team
• Taking responsibility for kitchen organisation, cleanliness and structure during your shifts
What we’re looking for:
• Experience as a Junior Sous Chef or a strong Senior Chef de Partie ready to step up
• Background in a high-quality hotel or restaurant environment
• Strong understanding of bistro-style, all-day dining and bar food
• A hands-on approach with the ability to lead from the front
• Good organisational skills and attention to detail
• A genuine interest in food, ingredients and consistency
• Ability to work well under pressure and maintain standards during busy service
