Red D are recruiting a Head Chef for a well-known, upmarket bar and restaurant in Sligo. This Head Chef role is a brilliant opportunity for someone coming from either a hotel or strong restaurant background who wants to take ownership of a busy, well-established kitchen.
The Head Chef will lead from the front, shaping the food offering, driving consistency and building a solid, reliable team. It’s a hands-on role where the Head Chef will be visible on the pass and fully involved in the day-to-day running of the kitchen.
The Role
The Head Chef will take full responsibility for the kitchen, delivering a consistent, high-quality food offering across a busy bar and restaurant environment.
- Lead and manage the kitchen team on a daily basis
- Deliver consistent, high-quality food across all service periods
- Design and evolve menus in line with the style of the business
- Manage food costs, GP, stock control and ordering
- Maintain strong kitchen systems, structure and standards
- Recruit, train and develop a dependable brigade
- Ensure full compliance with HACCP and food safety standards
- Work closely with front of house to ensure smooth, efficient service
The Person
This Head Chef role will suit someone who has come through either a hotel kitchen or a strong standalone restaurant and knows how to run a busy service properly.
- Proven experience as a Head Chef or a strong Sous Chef ready to step up
- Background in hotel kitchens or high-quality restaurant environments
- Comfortable managing volume while maintaining consistency
- Strong understanding of cost control and kitchen performance
- A steady, hands-on leader who builds and retains teams
- Organised, practical and calm under pressure
