Red D are recruiting a Bar Manager for a luxury hotel in Co. Mayo.

This is a fantastic opportunity for a strong Bar Manager to join one of the West of Ireland’s most exciting hotel operations.
We are looking for someone with real presence. Outgoing, confident, energetic and great with people. Someone who enjoys being on the floor, knows how to create atmosphere and can lead a busy bar operation while keeping standards high and service flowing.
The bar is a huge part of the guest experience here, so personality matters as much as experience. You’ll be leading from the front, building a strong team culture and making sure guests are looked after from the moment they walk through the door.

What You’ll Be Doing
– Managing the full day-to-day bar operation across the hotel
– Leading the team on busy services and setting the tone on the floor
– Delivering warm, professional service and a great guest experience
– Working closely with the Director of Food & Beverage on the overall drinks offering
– Managing cocktails, wines, spirits and premium beverage service
– Creating seasonal drinks menus and signature serves
– Training, mentoring and developing the bar team
– Managing rosters, labour costs and staffing levels
– Overseeing stock control, ordering and margins
– Driving sales through service, atmosphere and strong product knowledge
– Maintaining all licensing, health & safety and compliance standards

What We’re Looking For
– 3-5 years’ experience managing a quality bar operation within a luxury hotel or upscale venue
– Strong knowledge of cocktails, wines, spirits and premium beverage service
– A big personality with excellent guest engagement skills
– Someone confident leading from the floor in a busy environment
– Strong team leadership and people management experience
– Good commercial understanding around labour, stock control and profitability
– Calm under pressure with a hands-on approach to service
– Experience with POS and stock systems
– Food Safety and Responsible Service certifications preferred
– Full permission to work in Ireland
