Red D are recruiting a Restaurant Head Chef for a new luxury hotel opening in Co. Mayo.
This is a serious opportunity for a Restaurant Head Chef who enjoys building kitchens, leading teams and delivering high standards without losing sight of the commercial side of the business. The role is based in a beautifully designed new hotel property on the Wild Atlantic Way, with a strong food focus across restaurant, events and busy all-day service.
We are looking for a Restaurant Head Chef who can bring structure, leadership and energy to a pre-opening environment while also creating food that people genuinely want to come back for.
|You’ll need to be comfortable balancing quality and volume. One minute you’ll be focused on detail-driven restaurant service, the next you’ll be leading a large operation during peak trading periods. This role suits a Restaurant Head Chef who is calm under pressure, organised, commercially aware and good with people.
What you’ll be doing
- Leading the kitchen team across all food operations
- Developing menus that are creative, commercially smart and operationally realistic
- Driving consistency in quality, presentation and service
- Managing food costs, GP margins and purchasing
- Building systems and structure around prep, ordering and kitchen organisation
- Training, mentoring and developing the kitchen brigade
- Working closely with senior management during the pre-opening and launch phase
- Maintaining high standards in HACCP, hygiene and food safety
- Managing busy service periods while keeping standards high
What we’re looking for
- Previous experience as a Head Chef or Executive Sous Chef in a quality hotel or restaurant environment
- Strong leadership skills with the ability to motivate and develop teams
- Experience managing both restaurant and high-volume food service
- Good commercial understanding around labour, food cost and margins
- Organised, hands-on and calm under pressure
- Strong standards across food quality, hygiene and kitchen operations
- Someone who enjoys building a culture and setting standards from the beginning
