Red D are recruiting a Director of Food & Beverage for a leading five-star luxury resort in Leinster.
This is an outstanding opportunity for an experienced Director of Food & Beverage, Food & Beverage Manager, Operations Manager or Deputy General Manager to lead a large-scale food and beverage operation within one of Ireland’s most respected luxury hospitality environments.
The Director of Food & Beverage will take full responsibility for the strategic and operational leadership of multiple food and beverage outlets, banqueting, events and guest dining experiences. Working closely with the Executive Head Chef and senior leadership team, this role requires a commercially focused hospitality leader who can deliver exceptional guest experiences while driving revenue, profitability and team performance.
This Director of Food & Beverage role is suited to someone who enjoys being visible within the operation, developing high-performing teams and maintaining the highest standards across every aspect of the guest experience.
Key Responsibilities
• Lead and develop all food and beverage operations across the resort
• Inspire a culture of service excellence, quality, innovation and collaboration
• Manage, coach and develop the Food & Beverage Management team
• Work closely with the Executive Head Chef and culinary leadership team
• Drive revenue growth, profitability and outlet performance
• Manage budgets, forecasting, labour costs and departmental profitability
• Oversee procurement, inventory control and capital expenditure planning
• Lead menu development, pricing strategies and food and beverage concepts
• Monitor guest feedback and implement continuous improvement initiatives
• Ensure compliance with food safety legislation, health and safety requirements and quality assurance programmes
• Maintain the highest standards of luxury hospitality and service delivery
• Partner with People & Culture on recruitment, succession planning, training and employee engagement
• Collaborate closely with Sales, Marketing, Finance, Maintenance and operational departments
• Lead regular departmental meetings, communication and reporting processes
• Participate in Manager on Duty shifts and provide operational leadership when required
The Ideal Candidate
• Previous experience as a Director of Food & Beverage, Food & Beverage Manager, Operations Manager or Deputy General Manager within a luxury hotel environment
• Strong commercial and financial management experience
• Proven track record in budgeting, forecasting and cost control
• Experience leading large, multi-disciplinary hospitality teams
• Strong understanding of luxury service standards and guest expectations
• Excellent leadership, communication and stakeholder management skills
• Thorough knowledge of food safety legislation and operational compliance
• Experience working within Marriott or other international hotel brands would be an advantage
