General Manager | High-Volume Bar & Restaurant | Galway

€75,000 + Performance Bonus | OTE €100,000

Red D are recruiting an exceptional General Manager to take the lead of a major, high-volume hospitality operation in Galway.

This is a big General Manager role in every sense. A substantial operation, multiple bars and hospitality spaces, a large team, serious food and beverage turnover and some of the busiest trading periods on Galway’s calendar.

The successful General Manager will have real ownership of the business, from the P&L and commercial performance to people, standards, guest experience and day-to-day operations.

There is considerable autonomy here. You’ll report directly to ownership, have the freedom to make decisions and be expected to run the business with the commercial focus and accountability of someone who treats it as their own.

With a salary of €75,000 and OTE of €100,000 based on agreed performance targets, the package reflects both the scale of the position and the opportunity to deliver.

This will suit a strong, commercially minded General Manager who loves busy hospitality, enjoys leading from the floor and gets a buzz from running a venue at full pace.

The Role

As General Manager, you’ll take full responsibility for the operation and commercial performance of the business.

You’ll lead a large team across bars, food, hospitality and events, ensuring the operation runs exceptionally well from daytime service through to busy evenings and late-night trading.

Your responsibilities will include:

Leadership & Operations

• Take full operational responsibility for a large, high-volume hospitality business
• Lead, motivate and develop a substantial team across food, beverage and events
• Build a strong management structure with clear accountability across the operation
• Recruit, retain and develop excellent hospitality people
• Manage staffing levels, rosters, payroll and productivity
• Set clear service and operational standards and ensure they’re consistently delivered
• Be highly visible across the operation, particularly during key trading periods
• Create a positive, professional culture where people know what’s expected of them

Commercial & Financial Performance

• Take full ownership of the P&L and overall financial performance
• Deliver agreed revenue, profitability and performance targets
• Drive sales across food, beverage, events and private bookings
• Manage GP, labour and operating costs closely
• Analyse trading performance and act quickly on opportunities
• Maximise revenue during major events, festivals and peak trading periods
• Identify new commercial opportunities and turn them into measurable results
• Work closely with ownership on budgets, forecasts and future business plans

Food, Beverage & Guest Experience

• Maintain excellent standards across all food and beverage operations
• Ensure a consistently strong guest experience, regardless of how busy the venue becomes
• Work closely with the kitchen and F&B teams on quality, service, menus and commercial performance
• Keep the operation fresh and commercially relevant in a competitive Galway market
• Deal confidently and professionally with escalated guest issues

Events & Business Development

Events and group business are an important part of the operation, and the General Manager will play a key role in developing this revenue.

You’ll:

• Oversee private events, parties, corporate bookings and group business
• Maximise the commercial potential of the venue’s different spaces
• Develop relationships with local businesses, event organisers and tourism partners
• Ensure the business capitalises fully on Galway’s major events and peak periods
• Look continuously for ways to grow repeat business and increase spend

Compliance & Controls

• Ensure full compliance with licensing requirements
• Maintain excellent health and safety and food safety standards
• Ensure employment practices and working procedures meet legislative requirements
• Maintain strong operational and financial controls throughout the business

Who We’re Looking For

We’re looking for an experienced General Manager or senior hospitality operator who understands what it takes to run a genuinely busy operation.

You’ll need:

• Strong General Manager or senior operational management experience within a high-volume bar, restaurant, hotel, entertainment or hospitality environment
• Proven experience managing significant food and beverage revenues
• Excellent P&L knowledge and genuine commercial ability
• Experience leading and developing a large hospitality team
• Strong knowledge of labour management, GP, budgeting and cost control
• The confidence to make decisions and take ownership
• A hands-on leadership style and a strong presence on the floor
• Excellent communication and people management skills
• The ability to remain calm and make good decisions when the operation is exceptionally busy
• A strong understanding of guest experience and hospitality standards

Knowledge of Galway and its hospitality market would be a definite advantage.

Most importantly, this role needs someone who enjoys this type of business. Someone who likes the pace, the people and the atmosphere of a successful high-volume venue and wants the responsibility that comes with running it.

Working Pattern

This is a senior operational hospitality position and the working pattern reflects the business.

The General Manager will need to be present for key trading periods, which will include evenings, weekends, late nights and major events.

There will also be quieter management and administrative periods, and the successful General Manager will have considerable autonomy in managing their own schedule around the needs of the operation.

Salary & Package

• €75,000 base salary
• OTE €100,000 based on agreed performance targets
