Salary: €85,000 to €90,000 + Performance-Related Bonus, Pension & Medical 

Red D are recruiting a Head Chef for a luxury hotel in Co. Galway.

This is a fantastic opportunity for an ambitious Head Chef who wants real creative input and the opportunity to shape the culinary direction of a quality hotel.

The Head Chef will have significant influence over the menus, kitchen team and overall food offering, with a strong focus on excellent Irish produce, seasonality and great cooking.

The operation includes restaurant dining, private dining, weddings, celebrations and events, so they need a Head Chef who combines creativity with strong leadership, operational and commercial ability.

The Role

As Head Chef, you will:

• Lead the culinary direction and day-to-day kitchen operation
• Create seasonal menus built around excellent local and Irish produce
• Recruit, lead and develop a talented kitchen team
• Establish and maintain excellent kitchen standards, systems and procedures
• Develop strong relationships with local suppliers and producers
• Maintain consistently high standards of food quality, presentation and service
• Work closely with the General Manager and Food & Beverage team
• Take responsibility for food GP, menu costing, purchasing and stock control
• Manage labour planning, kitchen productivity and food waste
• Lead the kitchen through busy services with consistency and calm
• Oversee the food offering for private dining, weddings, celebrations and events
• Ensure full HACCP, food safety and health and safety compliance

About You

This Head Chef role will suit someone who is genuinely passionate about food and wants the scope to bring their own culinary style to a luxury hotel.

You’ll need:

• Proven experience as a Head Chef or Executive Head Chef
• Experience within a luxury hotel or similarly high-quality food environment
• A strong track record in creative and seasonal menu development
• Excellent knowledge of Irish produce, seasonality and sourcing
• Strong leadership skills with experience recruiting, training and developing chefs
• Good commercial understanding of food GP, menu costing, purchasing, labour and waste
• The ability to combine creativity with the commercial realities of running a successful kitchen
• Experience across restaurant dining, private dining, weddings, events or banqueting would be an advantage
• Strong knowledge of HACCP and food safety
• A hands-on leadership style and the ability to build a positive kitchen culture

Package

• Basic salary of €85,000 to €90,000 depending on experience
